So yes, here it is- my very own creation "Cupcake Dream with Irish Cream". I came up with the name because it has everything dreamy and good inside and within it- right from Hershey's Kisses to Baileys Irish Cream.
It was a Christmas Eve dinner at home and only a few close friends were invited. It was a potluck actually and I had hardly to make any preparations since the onus of arranging the dinner was not solely on my shoulder. But I feel a meal is incomplete without the finale which has to be some nice but not very heavy dessert. I did not have many ingredients at home that day to rustle up anything fancy, since I had just reached home two days back from a long official tour. And I did not get enough time to stock up the kitchen. But being the one with a weakness for chocolates I had remembered to buy loads of chocolates from the duty-free shops. And boy was it a great decision. I had everything right from Kisses to Liquor Chocolates in my goody bag. I had also picked up a bottle of Baileys Original Irish Cream. And bingo, I had the dessert almost ready in my head and could taste it in my mouth.
Well this dessert is definitely rich, and not in terms of the cream or chocolate it uses but because it has some really expensive stuff making its way into it. Read through. And of course you can try adding and deleting anything to suit and adapt your tastebuds.
For the Cupcake:
2 eggs
1 cup multipurpose flour
2/3 cup canola oil
2/3 cup sugar
1 spoon baking powder
1 pinch of salt
A few spoonfuls of milk (in case the consistency of the batter is thick)
2-3 drops Vanilla Essence (optional)
10-11 hersheys kisses/toblerone or any chocolate cubes. One can also use chocolate chips.
Method: Sieve baking powder and flour. Whisk the eggs, sugar and oil. Add the flour. Whisk till done. If the consistency is thick add a few spoonfuls of milk. Add the vanilla essence if using at this point. This makes around 10-11 cupcakes. If using chocolate chips mix it in the batter and then put the batter in the cupcake mould. Microwave for 3 minutes. Check and microwave for a few more seconds if required.
If using Kisses or other cubes, add a spoon of the cake mixture in the mould, add a piece of Kisses and then top it with more batter. Repeat the procedure for the other moulds and bake till done.
For the bottom layer:
Half a cup of low fat cream
1 spoon sugar
Whip the cream and sugar till fluffy and put the mixture in the serving bowl.
For the Chocolate Sauce:
2 spoon Cocoa Powder
4 spoon Milk Powder
A few spoon Milk
11/2 spoon sugar
2 spoon Whisky (optional)
1/2 cup low fat cream
Garnishing: half a cup or about 30 ml Baileys Irish Cream (serves 6)
Mix all of the above except the cream in a double boiler and once its mixed properly add the cream. Once the consistency becomes nice and bubbly take it off the double boiler.
Method to combine all three:
In a serving bowl, layer the bottom with a coat of whipped cream. Put the cupcake on top. Pour about a spoon of Baileys Irish Cream. This will give the dessert a unique taste and it will also ensure that the cake is moist Then top it up with chocolate sauce. You can add any chocolate like Malteasters on top to make it more beautiful and tempting.
