Triple Layered Chocolate Cake




I have a sweet tooth, and I have another just for chocolates. So you see, how I am doomed. 
This triple layered chocolate cake is pure decadance. Rich, velvety, melt in the mouth kind of goodness- sweet but not overt. Every bite is a bite of heaven. 

Also, this cake can be easily altered to suit your taste buds, so there I said it. While my base is a layer of coffee crumbled biscuit, one can use any biscuit here, or even a nicely baked sponge cake, if that's what you prefer. I topped this with a layer of dark chocolate and finished it with milk chocolate. One can definitely go for milk and white, or dark and white or even add an additional layer if you so fancy.

Ingredients:

For the base:

100 gm biscuit, I used coffee
40 gm butter, room temperature

For the middle and top layer:

150 gm cream cheese
200 gm low fat cream
2 tbsp powdered sugar
2 eggs
2 tbsp all purpose flour
1 tsp vanilla extract
1 tsp lemon curd, optional (you can use lemon zest,optional)
75 gm dark chocolate
75 gm milk chocolate

Method:

To make the base:

Pulse the biscuits. Add the butter and mix well. 
Now take a baking tin, I used one with a false bottom.
Press the base ingredients into the bottom of the tin and press it well. 
Bake at 170 degrees for 10 mins.

To make the layers:

Beat the cream cheese, low fat cream, eggs and vanilla essence with the sugar to a nice mix. Add the flour and mix well. 

Now divide this mix into two equal parts.

Use a double boiler melt the dark and milk chocolate separately. Mix the dark chocolate with one portion of the cake mix. And the milk chocolate with another part.

To bake:

On top of the base, add the dark chocolate mixture. Bake at 160 degrees for 20 minutes. 

Now take it out and top with milk chocolate. Bake for another 20 minutes at 160 degrees. 

Once done the cake will be firm on the sides by slightly jiggly at the center.

Let it cool.

Chill in the refrigerator for atleast 4 hours.

You can sprinkle a bit of cocoa powder on top, or even cherries and strawberries.

Note**

Use any digestive or chocolate biscuit for the base. In India you can choose from a selection of Oreo, Hide and Seek to even Lotus.
