Roasted Pumpkin Soup

Now if this ain't sunshine on your plate, I really dunno what is. And while the idea of a pumpkin soup might easily put most people off, this is one of those things that is a suprise in every mouthful. 

I have grown up eating pumpkin almost every day but as a vegetable. It is easy to prepare, the fleshy texture gives a nice taste and there is very little chance of going wrong with a pumpkin and potato fry (the Assamese way). I will post that very Assamese staple someday.

But I have always been wary of trying out a Pumpkin pie or a Soup. So much so that I have never ordered a pumpkin-based dish in a restaurant. But to get over my pumpkin paranoia and to check if the vegetable is actually as versatile as the world makes it out to be I tried preparing a pumpkin soup today. And trust me, I was pleasantly surprised. Next stop, Pumpkin Pie. But for today do enjoy this soup.

Yield 2-3

Ingredients:

300 gms pumpkin (deseeded and cut into 3 inch chunks)
2 tsp oil + more to drizzle
1/4 tsp turmeric powder
14 almonds/cashews or ¼ cup pumpkin seeds (soaked in water)
A tsp pepper
Chicken/veg stock cubes (optional)
1 cup thick coconut milk
½ tsp cinnamon powder
1/2 tsp allspice powder 
4-5 pods of garlic
Salt to taste

Method:

Drizzle oil and turmeric on the pumpkin, smear it properly and roast it in an oven till it is well done.
Add the soaked almonds/pumpkin seeds on a blender and blend till smooth. Once the pumpkin is done, blend it in a blender along with the nuts. 


Heat oil in a deep pan, put in the garlic and let it roast/brown.

Add the blended pumpkin and nut mix. If you want a slightly more yellow colour, add a pinch or two more of turmeric powder.

If using stock cubes, add that. This is optional. Cube is suggested, else the soup will become very runny instead of thick. 

When it bubbles and looks done add the cinnamon, allspice, and pepper powder. Scrape from the sides and bottom.

Add the coconut milk and bring to a boil.

Blend once more if you want a very smooth consistency. (I did not).

You can garnish with some more roasted garlic.
