Wanton or Dumpling Soup


And here it is, the wanton soup. So, during the summer of 2018 I was walking down the streets of St Petersburg. And as luck would have it, although I had checked with my bank and they assured that I will be able to use the cards there (American Express and Yes Bank), once we landed my cards did not work. Well, in the course of two weeks I could not find a single merchant who used American Express, and the Yes Bank cards did not work. Fortunately for me, my husbands card was working, and he used to take out money from his bank. We were five friends who had gone to Russia to witness the Football World Cup. So, while the boys had gone to the Fan Zone to watch a match, me and my girlfriend went to a cathedral and museum tour. 

After the tour we were famished and between the two of us we were left with very little cash. The boys were watching a match at a Fanzone about 2 kms away. And we decided that we would rather eat something first before we walk down to meet with them. Less cash meant we had to be judicious in our spends. And while one would associate a wanton soup with China, the dumpling soup that I had in Russia is by far one of the superior ones I have tasted. 

And it is from the memory of that trip that I have created the dumpling soup. Yes, this one has more oriental flavor, but tastes so good I am sure you will go back and prepare it a second time.

Ingredients:

For the soup

500 ml chicken stock

A bunch of spring onions

Ginger- 1 inch sliced

Garlic- A few pods

Fresh Ground Pepper- 1 tbsp

Soya Sauce- 2 tbsp

Salt, to taste (if needed)


For the Wanton:

Wanton wrapper- Approx 20

Minced chicken/mutton/pork- 225 gms

Soya sauce- 2 tsp

Spring onions - 2 sprig

Garlic- 2 tbsp, crushed

Ginger- 1 tbsp, crushed

Ground Pepper- 1 tbsp

Sesame oil- 2 tsp

Corn flour- 1.5 tbsp

Salt, to taste 


Method:

To make the soup, put the stock in a heavy bottom pan. If you are using store bought stock, check the level of salt and adjust. Add a little water if needed. Now add the rest of the ingredients to the stock, bring to a boil and then let it simmer for 15 minutes for the flavors to release.


After that strain the soup and separate the liquid. 


To make the wanton/dumpling:

Mix all the ingredients for the dumpling, except the wrapper. Mix it well.


Now take a dumpling wrapper, and wet two sides so that it is easier to seal the wrapper.



Take a little of the minced meat dumpling mix. and put it in the center.


Seal the wrapper properly in a shape of your choice.


Prepare all the dumplings/wanton.


Now put them in the soup/stock. And bring it to a boil for 10-12 minutes. The dumplings will start rising up, and will look well cooked. 


Take a soup bowl and enjoy the goodness. You can garnish with chives, spring onions or coriander.
