It was Bakri Eid, and after ages I was meeting one of my BFF Angel. Thanks to the quarantine the only time I have been moving out of home is to buy groceries.
I really do miss the festival festivities. Especially for an Indian we are bombarded with so many religious as well as cultural festival every month. But all of the festivals have been a damper this year. With the city slowly opening up, Angel invited me over for a lunch and stay over at hers for the weekend, of course taking all necessary precautions. So after I rang the doorbell, and the door was opened instead of jumping on her I went to first wash my hands, although I did drive my own car. The hugs came much later.
I didn't really want to go empty handed, firstly coz this was the first time I was meeting her at her home after her wedding. Also because Eidi. But I didn't wanna risk buying anything. So I baked these chewy chocolate cookies for her. I hope she liked it.
Yield: 16-18 cookies
Ingredients:
Refined Flour- 2 cups
Butter- 1 cup
Sugar- 1 cup
2 eggs
1/2 tsp baking soda
1/2 tsp baking powder
1 tsp vanilla extract
1 tsp salt
Method:
Sift flour, salt, baking powder and baking soda.
Mix the chocolate chip/chunks
Cream butter and sugar, add the eggs and give it a nice mix
Add the flour and bring to a doughy mix, not very dry but not very poury either. It should stay firmly in place when placed in the tray.
Then line a baking tin and line the cookie mix, keeping a gap of at least 1.5 inches between two cookies.
The cookies will spread to a thinner bigger shape when it is baking.
Preheat an oven and bake at 200 degree celsius for 12 minutes. Let it remain for 2-3 more mins before taking it out.
The cookie will be a doughy texture when you take it out, it is ok. Don't overtake. It will have a nice chewy texture.
