And desserts are of course a sweet ending to every meal. And like me if you have a sweet tooth, desserts might even mean breakfast and snack or the entree and main course. But I do love a dessert that has an edge of some other taste combined with the silky sweetness that a dessert is supposed to provide. And what's more divine and satisfyingly fresh than the citrusy smell and taste of lemon.
So here's a simple lemon cake to balance all your sweet craving. It might not looks beautiful, but every mouthful will keep you wanting for more.
Ingredients:1.5 cups refined flour
1 cup sugar
100 gms butter/ canola oil
2 eggs
4 tbsp buttermilk
2 tbsp lemon juice
1/2 tsp baking powder
1/4 tsp baking soda
1 tbsp lemon zest
1 tsp vanilla extract
1 tsp salt
For the glaze
30 gms white chocolate
1 tsp lemon zest
1 tbsp sugar
30 gms cream
1 tsp lemon juice
Method:
Sift flour, salt, baking powder and baking soda. Mix the lemon zest.
Cream sugar and butter/oil, then add the eggs one by one.
Mix lemon juice, vanilla extract and buttermilk
Now alternately add the wet mix and the dry flour mix to the butter and egg mix, starting and ending with the dry mix.
Bake in a preheated oven for 45 minutes at 150 degrees. Check once and bake for 15-20 more minutes at 120 degrees. When a toothpick inserted comes out clean the cake is done.
Let it cool completely before glazing.
Heat the cream and sugar. Add the white chocolate and incorporate into the mix. Now add the lemon juice and zest. Give it a nice mix and top it onto your cake.
