Sun Dried Tomatoes

Well, if you ask me why I tried making Sun Dried Tomatoes, I will give you a reason. I am cheap. And sundried tomatoes are very expensive in India. Also, the second reason is "summers". Delhi temperatures are averaging anywhere between 40-45 degrees last few weeks, so why not make use of this. 

I scoured the net for various sundried tomatoes option, and while there are options of oven drying, I actually did go all the way to sun- dry. Also, try and get similar sizes of tomatoes so they dry at a uniform rate. I used the regular tomatoes that are available at the grocer's. 

While there is no recipe, I followed the following steps:

Step 1: Wash, clean and cut the tomatoes, then deseed them. 
Step 2: Place it on a plate (preferably a net, if you have) with the inside facing upwards. Sprinkle some salt and herbs like thyme, oregano.
Step 3: It may take up to three days, when the top looks dry turn it upside down.

**Ensure that the tomatoes are completely dry before storing, else it will start molding.
