Omelette à la Oats




The recipe comes from eggs my aunt and ma used to make, in their quest to create healthy filling breakfast. It has long been one of my favourite meals to start the day with, second only to Aloo Parantha.
This Omelette is tasty, guilt-free and so filling that it needs no bread on the side, just a mug of tea or coffee. 


Here's what you need for one big healthy Omelette

2 Eggs 
Ground Rolled Oats 
Half a Capsicum
1 Tiny Cute Lil Baby Onion (or half a medium-sized)
1 Green Chilly (Optional)
2-3 Cloves of Garlic
Salt
Pepper
Oregano or mixed herbs (Optional)
Chilly Powder
Butter or Oil

Note: The ingredients are for a single portion (as I often cook of just myself), increase proportionally depending on how many mouths you need to feed.

Method:

1. Ground Oats

Just throw some rolled oats in a blender and make a coarse grind (not fine powder).


On a day my blender broke I made this without grinding the oats and even that turned out acceptable.

2. Veggies!

Roughly Chop the Capsicum, Onions, Chilli and Garlic. Throw in the Capsicum in a pan with some butter and saute for a few minutes. 
Next, add the garlic and onions. Saute!


I like a little crunch of the veggies in my Omelette so I prefer not to let the onion get translucent.


3. The Batter

While you have the veggies cooking, break the 2 eggs in a bowl
Add a 3-4 spoonful of oats and a pinch of salt, pepper, herbs and red chilly. You can also put 2 spoon milk to make the omelette creamy. 
Whisk wildly with a fork till frothy, have fun with it!



Now with the sauteed veggies added, you have the omelette mix ready.


4. The Cook Out

Pour the mix in a preheated and greased preferably shallow pan. 




Keep the flame low and cover the pan (this is important!)

Pace impatiently while the Omelette slowly cooks. Put on a pot of coffee so you don't go crazy waiting,




Eventually, you should smell a sweet aroma of cooked eggs drifting from the pan.

Remove the lid to behold a fluffy Omelette.



Flip it over to give the top side a little love, and in a minute it should be ready to be devoured.
