No Bake Mango Cheesecake



So we are almost at the end of Mango season, and I had to make this no bake mango cheesecake atleast once. The one thing I love about summers is Mango and of course all the other wonderful fruits that this season offers- from wild berries, cherries and plums to varieties of mangoes, this is a season when can experiment abundantly with fruits.

I tried this delicate cheese cake and I am so happy this works, because not only is it nobake but it also has no binding ingredient- gelatin, agar agar, eggs or marshmallow. So one need to be extremely careful when taking it out from the tin or ring. This is a very small cheesecake of 4 inch diameter which serves two people. But one can easily double the quantity for more.

I have given a version with gelatin/ marshmallow, use a 5 inch ring in that case.


Ingredients:

5-6 pcs Digestive Biscuits
1 tbsp melted butter
1 cup mango pulp
1/3 cup hung curd
1/3 cup cream cheese
1/3 cup cream, I used Amul
3-4 tbsp sugar 
A pinch of salt
A squirt of lime juice, optional
1 tsp gelatin, dissolved in cold 1 tbsp cold water, optional or 3 marshmallows melted in 1/4 cup milk
Fresh fruits for toppings 

Method:

Powder the sugar.

Puree the mango pulp.

Crush the biscuit and add butter, mix it well. Set it inside a 4 inch pie dish or ring. Press it down evenly with your palm and refrigerate for a few minutes.

Beat the cream cheese, hungcurd and cream together, add sugar and salt and mix well. 
Add the mango puree and mix.

Taste once to check for sweetness. A lot of it would depend on the sweetness and the variety of mango. Add more sugar if you want. 
Now if you want you can add a bit of lemon juice.

Also, this is a delicate cake, and might spill over if you are not careful while taking it out. So to avoid this you can add a spoon of gelatin or melted marshmallow. I did not add in mine. 

Now top the mix over the biscuit base and let it set in the fridge overnight. You might want to put it in the freezer an hour before you cut it. 

Voilà, top with fruits and berries of your choice and enjoy ❤️❤️❤️

Note, that marshmallows also contain sugar.
